Taco Salad!

Food does not need to be complicated!

Taco salad is one of my favourite things to make. It’s easy, delicious, and healthy. I like to add texture (in lieu of taco shells πŸ˜‰) by using kale slaw (or coleslaw).

Salsa, guacamole, sour cream, and sauerkraut are all great toppings! I try to limit my dairy so often don’t use sour cream (my husband likes both sour cream and shredded cheese). Today I topped mine with some goat cheese feta though 😊

I prefer to make my own taco seasoning. Have you ever looked at the ingredients in store bought seasoning? Ick! It’s so easy to make your own – you probably have all the ingredients already.

This recipe is from Wellness Mama (a website that is loaded with great recipes and info! I link her website at the bottom)

1/4 cup chili powder

1/4 cup cumin (I usually do a bit less since I’m not a big cumin fan)

1 tablespoon garlic powder

2 tablespoons onion powder

1 teaspoon oregano (I use dried leaves)

1 teaspoon paprika (I’ve subbed cayenne for this and it’s been just as good!)

1 tablespoon salt

1 teaspoon ground pepper

That’s it!

I use about 1 tablespoon of the seasoning per pound of ground beef. I add about 1/2 cup of water as well.


Brown 1lb ground beef (we like ours very crispy!). Add 1 tbsp of seasoning and 1/2 cup of water. Let it simmer for 5 mins. You can get all your veggies and toppings ready whilst your meat is simmering!

You can use any meat you like! You could even slow cook pork or chicken with the seasoning mix and use shredded meat instead of ground!
