On this weeks menu we have meatballs! I love meatballs in a nice tomato sauce with noodles. Meatballs are so simple to make but so satisfying! And when paired with zucchini noodles they make a super nutritious meal.
Ingredients for meatballs
- 1lb ground pork
- 1lb ground beef
- 2tsp ketchup seasoning (or any seasoning of your choice)
- 1tsp minced garlic
- Salt & pepper
Other ingredients:
- Jar of pasta sauce (I used Whole Foods brand)
- 2 zucchini’s
- Kelp Noodles – completely optional
- Nutritional Yeast or Parmesan
- Hot sauce
- Mushrooms – also optional
What the heck to do:
Mix all the ingredients for the meatballs in a bowl, form into balls and pan fry. Once they are crispy you can either finish cooking in the oven or, my preferred method, throw into the pasta sauce and let them cook for a couple hours.
If you’re going to finish cooking the meatballs in the sauce you want to put the sauce in a pan, toss in your mushrooms and get it boiling. Add your meatballs and turn to low for 2 hours or meatballs are no longer pink inside. Add your nutritional yeast/Parmesan and hot sauce minutes before you serve.
Towards the end of the cooking time shred your zucchini’s, sprinkle with salt and lay the noodles on paper towel to absorb the moisture. Feel free to sauté the noodles to soften them (I prefer them raw). If using the kelp noodles soak them in water and rinse! Serve and enjoy!
